{"id":8705,"date":"2012-08-10T09:40:09","date_gmt":"2012-08-10T09:40:09","guid":{"rendered":"https:\/\/intercultura17.wpengine.com\/?p=8705"},"modified":"2021-04-14T21:54:48","modified_gmt":"2021-04-14T21:54:48","slug":"mein-gallo-pinto-rezept-schritt-2","status":"publish","type":"post","link":"https:\/\/interculturacostarica.com\/de\/mein-gallo-pinto-rezept-schritt-2\/","title":{"rendered":"Mein Gallo Pinto Rezept &#8211; Schritt 2"},"content":{"rendered":"<h3><strong><big>In 3 Schritten zu Gallo Pinto &#8211; Reis kochen<\/big><\/strong><\/h3>\n<p>Die Bohnen sind gekocht oder noch am Kochen (<strong><a href=\"https:\/\/interculturacostarica.com\/blog\/mein-gallo-pinto-rezept-schritt-1\" target=\"_blank\" rel=\"noopener noreferrer\">Schritt 1<\/a><\/strong>).<\/p>\n<h5><strong>&#8230;weiter geht&#8217;s mit Schritt 2: Reis kochen wie die Ticos<\/strong><\/h5>\n<p>Der Reis kann ebenso wie die Bohnen am Vorabend gekocht werden. So hat er auch gen\u00fcgend Zeit zu erkalten, bevor er dann am n\u00e4chsten Morgen f\u00fcr das Gallo Pinto gebraucht wird.<\/p>\n<h5><strong>Reis nach costaricanischer Art<\/strong><\/h5>\n<p>Am einfachsten und am schnellsten geht es mit einem Reiskocher. Traditionell wird der Reis jedoch im Topf oder in einer tieferen Pfanne zubereitet. Das ist auch gar nicht weiter kompliziert. So wird&#8217;s gemacht:<\/p>\n<h5>Zutaten:<\/h5>\n<ul>\n<li>wer auf Vorrat kochen m\u00f6chte: 2 volle Tassen trockenen Reis (1 Tasse = ca. 250 g), keinen Klebreis verwenden!!<\/li>\n<li>2 volle Tassen Wasser (gleiche Menge wie Reis)<\/li>\n<li>reichlich Pflanzen\u00f6l (ca. 4 &#8211; 5 Essl\u00f6ffel), es geht auch Margarine<\/li>\n<li>1 kleine Zwiebel und eine halbe <em>Chile Dulce<\/em> (= rote Paprika) in kleine W\u00fcrfel schneiden<\/li>\n<li>3 &#8211; 5 Knoblauchzehen beim Sch\u00e4len leicht anpressen und klein hacken<\/li>\n<li>Salz und eine Prise Pfeffer<\/li>\n<li>Wer mag: frisches Koriandergr\u00fcn, klein hacken<\/li>\n<\/ul>\n<p>Den Reis in einem Sieb waschen und abtropfen lassen. Die Zwiebel- und Paprikaw\u00fcrfel in reichlich \u00d6l \/ Margarine and\u00fcnsten und anschlie\u00dfend zusammen mit dem Knoblauch und ein wenig Koriandergr\u00fcn anbraten. <strong>TIPP:<\/strong> Da Knoblauch sehr schnell anbrennt, gebe ich ihn erst sp\u00e4ter zum Anbraten hinzu, kurz bevor ich den Reis hineinsch\u00fctte.<\/p>\n<p>Den gewaschenen Reis dazugeben und mit anbraten. Wenn er schon ein wenig ger\u00f6stet ist, mit der entsprechenden Menge an Wasser abl\u00f6schen und salzen (der Reis sollte von ca. 1 cm Wasser bedeckt sein). Ich gebe immer noch eine Prise Pfeffer und etwas Koriandergr\u00fcn hinzu. Den Reis auf hoher Flamme ohne Deckel kochen, bis das Wasser verbraucht ist.<\/p>\n<p>Wenn das Wasser vom Reis aufgesogen ist, den Topf oder die Pfanne mit einem Deckel abdecken und den Reis auf kleiner Flamme weiterkochen lassen bzw. dampfgaren. Nur so wird auch der Reis im Kern gar. Der Topfdeckel sollte dabei zwar geschlossen bleiben, dennoch kann zwischendurch hin und wieder nachgeschaut und umger\u00fchrt werden. <strong>TIPP:<\/strong> Der Reis wird lockerer, wenn man ihn mit einer Gabel umr\u00fchrt!<\/p>\n<p>Reis braucht und darf w\u00e4hrend des Kochens eigentlich nicht umger\u00fchrt werden.
